Cake Mix Cookies

Image
I decided to make these last month and never wrote about it. I know, I'm an awful blogger. That or life got in the way.  Anyhow, I made some delicious cake batter cookies with my free sample of Country Crock margarine I got from Influenster last month. They're really easy to make and you can pretty much add in whatever you want to make it your own. In fact, I split my batch in half and made a confetti batch and a chocolate chip batch, but I'm focusing on the confetti batch for this post.  You will need: 1 yellow butter cake mix (I used Pilsberry)  2 tbs large sprinkles + more for decorating (optional) 1/2 cup margarine or butter ( I used my free from Influenster country crock margarine) 1 egg 1 tsp vanilla  Icing (optional) Preheat your oven to 350. Line a baking sheet with wax paper and coat it with cooking spray.  Mix all of your ingredients, minus the icing.  Scoop out 1 tbs of dough and form a ball. This month's VoxBox was really a VoxVoucher. I'm cool with that. It was a coupon for a free tub of Country Crock butter. It's like Infuenster knows I'm a fat kid. I love butter. You have toast? I have butter! You have mashed potatoes? I have butter! You want to bake cookies? I have sugar, flour, eggs, & .....yup; butter!  Yesterday I got home early and decided to get involved with the #MakeItYourOwn campaign. I make cake cookies. They were awesome. I'll blog that recipe later.  Now for the review on Country Crock butter. I think it's actually margarine but it works the same, I think.  It's really smooth and spreads very easily. It's not my normal brand but it works in a pinch. (We're a Land o Lakes family.) It tastes fine and like butter. (I didn't do my homework, but I'm pretty sure it is a margarine and not an actual butter.)  My cookies tasted just like they would if I had used real butter so I really can't complain about the taste
